Easiest Homemade Chicken & Rice

I was trying to figure out what to make for supper and as I was looking through my freezer and my cupboard I found some chicken thighs and brown rice so I decided I’d make chicken and rice, which is my boys’ favorite meal. Even my picky eater loves it!

  • 1 cup of brown rice
  • TBSP Butter
  • 1 tsp Salt.(For flavor I used Garlic Salt)
  • 1 tsp of Onion Powder
  • 4 boneless skinless chicken thighs, thawed
  • 2 cans of chicken broth
  • 1 can cream of celery soup

In a big pot put the rice, butter, salt, onion powder, chicken, and broth in the pot. Bring to a boil on med-high heat then put a lid on the pot, turn heat to low and simmer for about 45 – 50 minutes or until rice is cooked. The chicken will cook along with the rice. Once done stir in the soup and simmer for another 5 or so minutes. Serve with your favorite flavors!

I like to add my favorite salsa verde and a little sour cream in my chicken & rice. Of course the boys like theirs just as it is!

YouTube? Do you vlog?

I’ve been contemplating whether or not to do youtube vlogs. You see, I’m an introvert and I don’t have many friends. Okay, I have one good friend, which by any means is a great thing. Of course my husband is my bestest friend!! It’s hard to put myself out there. Anyway, I thought it would be a fun way for me to be “out there” without having to actually be “out there”! Does that make sense? It’s taken me a few years but I made a channel. I posted a silly one to get a feel. I’d like to know what the youtube users use to edit theirs but I’m not brave enough to forwardly ask. I do need to make an introduction one though. It ain’t much yet but I’m working on it.

Welp, gotta get this schooling thang goin’.

Not Another Tator Tot Casserole!

Yes another one! But this one is special because I made it special for a special guy! Sadly, I have an extremely picky eater. I have no idea why because me or his dad are not. So here ya go, my take on the old go-to

  • 1lb of ground meat (turkey, chicken, pork or beef)
  • 1 can of cream of mushroom soup
  • Small bag of tator tots
  • Dash of Worcestershire sauce (I say horsey sauce lol)
  • Whatever seasonings you like

Instructions: Preheat oven 425

Cook meat until done. Drain if you must (I don’t). Add the soup, Worcestershire sauce, and whatever seasonings you like. Simmer for about 3-5 mins.

Place meat mixture in a 9×13 baking dish. Place in single layer the tots. Bake for about 25 minutes or until the tots are cooked how you like. I like mine a bit crispy so I do about 10 more mins. Up to you though.

*Note: sometimes I add fresh mushrooms to the ground meat while it’s cooking. They get small enough that my picky eater doesn’t realize they’re there.

*Note #2: Add vegetables to the mixture while it’s simmering if you like’em

Just a little rambling

I am suffering from what some may call fried brains! I have started my classes in English and Psychology and my brain hurts! My thoughts are a blend of connotations and psychological stresses. I feel I may turn in the wrong work to the wrong class sometimes. Read, read, read, oh and write are the main theme of my assignments of late. I do enjoy reading about psychology and learning how to be a better writer from what I’ve learned from my English class. It can be stressful especially when my little is having some sort of milestone that prevents him from utilizing his legs and therefore needs to be connected to my hip or breast at all times. He is super cranky and clingy and no amount of distraction will keep him from completing his mission of driving this momma insane! Please tell me I’m not the only momma that’s going through these clingy, cranky phases right now! This too shall pass.

This is all in good heart and humor. I don’t hate life I promise!

I need to go fishing!!!

Barefoot Momma’s Morning Prayer

Thank you for blessing me with another day to be with my family. It is truly a privilege. So far I have not had to repeatedly remind my children to pick up their toys so someone doesn’t trip and hurt themselves. I have not had to talk through gritted teeth to get my point across, huffed in exasperation and exhaustion or checked the time for brushing of teeth and bed time story. I’ve been able to type this with two hands instead of one due to my toddler that demands undivided attention at all times. I’ve been kind, compassionate and patient. So far they have been well behaved today. They haven’t jumped off the couch, made the noisiest noises, and been keeping their hands and toys to themselves rather than in each others faces. My oldest hasn’t asked, for the millionth time, to play minecraft knowing he is grounded. My middle child hasn’t had a meltdown over baby brother taking his food or toy and my toddler hasn’t needed to nurse for the hundredth time. Shortly, though, they are going to wake up, get out of bed and it will all change in a heart second.

So please grant me the patient to accept all the above, for I know it will not change, the courage not to hide in my bathroom for the remainder of the day and the wisdom to teach and guide my children to pick up their lego!
