Winner, Winner Chicken Dinner!

I love chicken! Baked, fried, grilled, bar-b-que,  it doesn’t matter how it’s cooked I love chicken!  So I have another recipe fer ya! I love experimenting with food and coming up with some easy but tasty meals. Especially one-pot-meals. My favorite cut of chicken meat has always been the thigh. It’s so flavorful! So without further adieu…

One pot chicken meal

  • 6-8 bone-in, skin on, chicken thighs
  • Small bag of baby carrots
  • 6-8 red potatoes, halved
  • Garlic powder
  • Onion powder
  • Salt & Pepper
  • 1 1/2 cup of chicken broth
  • 3 tbsp butter

In a good size pan, melt butter on med high heat. Place chicken thighs in melted butter, cover, and let’em cook on both sides until lightly browned. Once that’s done put in the rest of ingredients. Now, you can do those seasonings to your taste. I usually give the bottles a few shakes each! Bring broth to a boil then put heat on low and simmer until chicken is done and potatoes and carrots are tender, about 35-45 minutes. Voila!

You can do just about anything in a one pot meal. I’ve done enchiladas, on stove top, and in one pan. I don’t like turnin on the oven if I can help it! 😉
